Here at the HCGA Diet Club we like to entertain, so we invited a few members round for lunch, but before we asked our guests what was their favourite HCG diet recipe so we could cook it for all those invited. Obviously everyone didn’t agree! But there was one that proved more popular than the rest so I thought I’d better share it with you, so…
Drum roll please…
I give you Garlic Chilli Shrimp on Lettuce!
For 1 serving
- 100g shrimp peeled and cleaned
- 2 cloves of garlic
- 1 teaspoon sambal olek
- 1/2 teaspoon fresh finely chopped ginger
- 1 scallion chopped
- 1 teaspoon Bragg’s liquid aminos
- 1/2 tablespoon lemon juice
- 1/2 packet of stevia
- Lettuce leaves (permitted amount)
Get a non-stick skillet on the stove and heat to medium, then add the shrimp and the scallion and saute for a minute or two. Add the rest of the ingredients and continue to cook until the shrimp is cooked through, about another couple of minutes. If you think everything is getting too dry add a little water, remember you want a little sauce to pour over the finished dish.
Place the lettuce leaves on a plate spoon over the sautéed shrimp and scallion and finish with the remaining juices. You can either eat with a knife and fork or just do what I do, wrap the lettuce around the shrimp and use your hands!!
