In our continuing effort to create mouth watering HCG recipes to make the HCG diet enjoyable, I want to offer up this shrimp recipe that I concocted over the weekend, I loved the combination and I think you will too!
- 100g cooked shrimp
- Tomatoes (permitted amount)
- 1 tablespoon of parsley or cilantro – you decide!
- Juice of half a lemon
- Tabasco sauce
- Salt and pepper
To begin with either pulse the cooked shrimp in a food processor a few times or chop with a knife. Then in a small bowl combine the shrimp with the herbs, lemon juice, salt and pepper. At this point you can experiment if you wish by adding additional seasonings. Cover and refrigerate for at least 30 minutes.
When you are ready to serve, cut the top of the tomatoes and scoop out the insides. Chop and combine the inside of the tomatoes (removing the pips if you want) and then combine with the shrimp mixture. Now, simply fill the tomato shells with the shrimp mixture adding a couple of dashes of tabasco sauce for an extra kick!
This HCG recipe also works well with baked and flaked fish as well.
