If I were asked what my favourite style of food was I think it would be an have to be an Asian curry, whether it be from India, Thailand or anywhere on the continent. The combinations of spices, heat and healthy ingredients make a perfect meal. While it may be a little difficult on the HCG diet, there are still HCG recipes that allow the flavor without the calories, for example….
- 100g skinless chicken breast
- 2 teaspoons onion powder
- 1 clove of garlic minced
- 1 tablespoon curry powder (choose your heat strength!)
- 1/2 teaspoon ground cumin
- 1/2 cup fat free chicken broth
- Juice of 1 lime
- 2 cups of spinach
In a bowl combine all the ingredients except the chicken and spinach with half the lime juice. Mix together and then add the chicken either whole or cut into strips making sure to coat all over cover and leave to marinade for at least an hour in the refrigerator. Heat a non-stick pan, add the chicken and marinade, cooking until the chicken is done, adding the chopped spinach for the last couple of minutes. Serve in a bowl squeezing the remaining half of lime over your delicious curry…enjoy!
