I love Mexican food! Maybe that was part of the reason that I ended up needing a weight loss solution! While on the HCG diet I soon realised it wasn’t the huge portions, the ribs, or all that cheese added to my favourite dishes, it was actually the subtle flavours of the herbs and spices that stimulated my palate, in this case cumin and cilantro. So here’s a gorgeous Mexican soup without the calories that’s packed with flavour….
- 100 grams of shredded cooked chicken
- 2 cups of chicken broth
- 1/2 onion diced onion
- 1 clove garlic finely chopped
- 1/4 teaspoon cumin
- 2 teaspoons chopped cilantro
- Cayenne pepper (only a pinch)
Heat a saucepan on a medium heat then add the chicken broth, onion and garlic. Cook for 5 minutes moving it around in the pan. then add the shredded chicken and the rest of the ingredients and half of the chopped the cilantro, cook for a further 15 minutes. Serve in a bowl with the remainder of the cilantro sprinkled over…
