When you begin Phase 2 of the HCG diet, I expect that you will be thinking I will have to prepare a meal for the family and a separate HCG recipe for me, all that extra work! But that is simply not true. Here’s a Beef roast that the whole family or dinner guests can enjoy with the usual accompaniments, while you just swap those for your permitted vegetable choice, so get in the kitchen and start cooking!
- 3 lb lean beef roast all fat removed
- 8 garlic cloves (or more if you like!) 1 Onion peeled and cut in half
- Fresh oregano (or 1 teaspoon dried)
- Sea Salt
- Freshly ground pepper
Begin by making sure that all fat is removed from the beef. On the stove heat a non-stick roasting tray until hot. In the meantime rub the oregano, salt and pepper all over the beef and then add to the tray and brown all over.
Remove from the heat and add the water until it is roughly 1inch deep. Place in the oven and bake for 15 minutes on 350. Add the halved onion to the tray and continue to bake for 45-60 minutes depending on how you like it cooked, personally I like it medium rare!
While it’s cooking prepare the accompaniments. When cooked remove from the oven and leave it to rest for around 15 minutes before carving off your permitted amount and serving with your vegetable allowance, the others at the dinner table can have the rest…oh and don’t forget to make them clear up afterwards 🙂
