When I was a young boy growing up, my heart would fill with joy when my Mom would ask, “would you like some minestrone soup?”
For those that don’t know Minestrone soup is a hearty Italian soup filled with vegetables and little pieces of pasta, and tastes even better with a grating of parmesan grated over it and a piece of freshly baked crusty bread to dip in it.
Now obviously I have just mentioned three ingredients that are definitely not allowed in HCG diet recipes! So I have omitted the pasta, parmesan and bread, but this is still a tasty HCG recipe that once tasted you will enjoy time and time again…
This HCG recipe makes 8 servings, so make sure to freeze the remainder for ready cooked meals in the future.
Ingredients
- 29 oz can of crushed tomatoes
- 8 cups of fat free chicken broth or stock
- 1 onion finely chopped
- 1/2 head of cabbage finely shredded
- 2 medium carrots diced
- 1/2 cup of sliced celery
- Teaspoon of Italian seasoning
- Salt
- Pepper
You are going to love this….
Put all ingredients in a pan bring to a slight boil and then simmer for 20-25 minutes.
